And so it begins...

Hey folks, this is my first try at blogging so be nice! I get so many questions about what it's like being a chef, owning a restaurant, etc. that I figured I'd put my thoughts down here for all to read. From time to time, I'll be writing about whatever I feel like as relates to the restaurant & catering business. It's been a wild ride since December, 2004 when my wife Rosemarie and I opened our own restaurant, J.Baldwin's Restaurant & To-Go, in Clinton Township, Michigan. Nobody ever said it would be easy, and boy were they right! Since opening the restaurant, we've also expanded it, as well as opened a Catering division.
